Ingredients 2 Flat Iron Steaks (8oz) – shoutout Paulina Market2 Tbs Kerrygold Salted Butter Course Sea Salt (to desired taste)Crushed Peppercorns (to desired taste)3-4 Thyme Stems Instructions Take steaks out of fridge 20-30 minutes before cooking time to bring to room temperature.Season steaks generously on all sides with course sea salt and crushed peppercorns.Heat cast iron pan to medium/high heat.Drop butter & thyme stems in pan.Place steaks in pan and cook for 7 minutes on each side or until meat reads 135 degrees; occasionally spooning butter from pan on top of steaks.Let rest for 7 minutes & slice to serve.

Ingredients 1 Pound Turkey (ideally NOT 99% lean)1-2 TBS Brown Rice Flour⅓ Cup Apple (Small Dice)½ Tsp Sage½ Tsp Adobo Sea Salt & Pepper to taste Instructions Combine all ingredients and form into four 4-ounce patties. Ingredients Buffalo Sauce HoneySalt2.5 LBS of Chicken Wings Instructions Cut wings at the joints to separate the flat from the drumstick and remove the tip. Place wings into a large pot filled with water – cover and bring wings to a boil for 8 minutes. Remove from water, drain, and pat dry with paper towels. Preheat Oven to 425 Degrees. Salt chicken wings and spread out on a sprayed bacon baking pan so the fat can drip down to the catch pan. Cook for 25 minutes and then flip wings and cook for another 5-10 minutes. This should be enough to make the wings nice and crispy. Let the wings cool for about 5 minutes while you mix the buffalo sauce with some honey to your desired sweetness. Ingredients 1 Cup Masa1 Cup Milk (I used Oat Milk)¼ Cup Frozen Sweet Corn (Thawed) – Optional1 Egg1 Tsp Baking Powder2 TBS Brown SugarDash Sea Salt Instructions Combine ingredients. Batter with be thicker than regular pancake batter. Heat skillet to medium and coat pan with butter. Scoop about 1/4 – 1/3 cup of batter into skillet. You will likely need to pat the cake down to spread the batter. Once lightly brown on one side, flip and continue to cook until cooked through. This recipe makes about 6 small pancakes. Serve with honey and butter with breakfast or as the bottom of an open faced burger.
