Corn Cakes


  • 1 Cup Masa
  • 1 Cup Milk (I used Oat Milk)
  • ΒΌ Cup Frozen Sweet Corn (Thawed) – Optional
  • 1 Egg
  • 1 Tsp Baking Powder
  • 2 TBS Brown Sugar
  • Dash Sea Salt


Combine ingredients. Batter with be thicker than regular pancake batter. Heat skillet to medium and coat pan with butter. Scoop about 1/4 – 1/3 cup of batter into skillet. You will likely need to pat the cake down to spread the batter. Once lightly brown on one side, flip and continue to cook until cooked through. This recipe makes about 6 small pancakes. Serve with honey and butter with breakfast or as the bottom of an open faced burger.
