Ingredients 1 lb Ground Lamb 1 Cup Shredded Carrots 1 tsp Sea Salt 1 tsp Oregano 1 tsp Marjoram 1 tsp Parsley ½ tsp Pepper 1 Tbs Fresh Squeezed Lemon Juice ½ Sweet White Onion (chopped) Instructions Sauté onion and carrots in skillet on medium heat until it begins to soften. Add lamb, seasonings and lemon to the skillet and let the flavors combine. Mix together and cover until cooked through. I don’t normally use garlic but it would be awesome in this recipe. Feel free to add a couple cloves of garlic (minced) or ½ tsp of garlic powder for additional flavor. This scramble is particularly yummy over spaghetti squash or with a couple of over-easy eggs on top.

Heat skillet to medium high and add ghee or coconut oil. Add veggies to the skillet and allow them to soften slightly. Once the veggies begin to cook, add the turkey and seasonings and continue to cook until the flavors develop and the turkey is no longer pink. This dish is great with greens and eggs if you want to mix it up. I usually use whatever I have in the fridge for veggies that needs to be cooked. Also yummy with over-easy eggs and a smidge of raw cheese on top.
