1 lb Ground Lamb
1 Cup Shredded Carrots
1 tsp Sea Salt
1 tsp Oregano
1 tsp Marjoram
1 tsp Parsley
½ tsp Pepper
1 Tbs Fresh Squeezed Lemon Juice
½ Sweet White Onion (chopped)
Sauté onion and carrots in skillet on medium heat until it begins to soften. Add lamb, seasonings and lemon to the skillet and let the flavors combine. Mix together and cover until cooked through.
I don’t normally use garlic but it would be awesome in this recipe. Feel free to add a couple cloves of garlic (minced) or ½ tsp of garlic powder for additional flavor.
This scramble is particularly yummy over spaghetti squash or with a couple of over-easy eggs on top.
