Beef Stew
Ingredients
1-1.5 lbs of Grass-fed Stew Beef
1 Cup Chopped Organic Carrots
1 Cup Chopped Organic Celery
1 Cup Chopped Organic Button Mushrooms
1 Cup Frozen Organic Corn
1 Vidalia Onion (Chopped)
1 Head/Bunch of Curly Kale (Chopped)
1 Tbs Fresh Chopped Basil
1 Tsp Oregano
1 Tsp Parsley
1 Tsp Marjoram
2 Tsp Sea Salt
½ Tsp Pepper
2 Tbs Apple Cider Vinegar
6 Cups Filtered Water (or enough to come to the top of the ingredients)
Instructions
Rinse and chop all the veggies and add all the ingredients to your Crockpot. Set on low and cook for 8 hours. The time isn’t an exact science, sometimes I leave this on for 12 hours and it still comes out great☺. Best case scenario is if you make your own beef bone broth and use this instead of water but if you don’t do that, water works just fine. If you like potatoes in your stew please feel free to add white or sweet potatoes for an additional yum factor. Almost anything is fair game based on what you have for veggies in your fridge, this combo just happens to be my favorite at the moment.
