Butternut Squash Hash
Ingredients
1 Butternut Squash (peeled and chopped)
½ Vidalia Onion (chopped)
1 Green Apple (chopped)
1 Tbs Ghee or Coconut Oil
½ Tsp Sea Salt
Instructions
Peel, de-seed and chop butternut squash into small cubes. Chop green apple (skin on) and onion into similar size cubes. Heat the skillet to medium and add ghee or coconut oil. Once the oil is melted add ingredients to the skillet and cook covered until soft and slightly charred/caramelized. This should take approximately 10-15 minutes of cook time, occasionally stirring.
