Beef Skillet & Wild Rice
Beef & Onions
Ingredients
2 lbs Grass-Fed Ground Beef
1 Vidalia Onion
1 ½ Tsp Salt
Pepper to Taste
Roasted Bell Peppers
Ingredients
3-4 Bell Peppers (Various Colors)
Dab of Coconut Oil
Sprinkle Salt and Pepper
Wild Rice
Ingredients
1 Cup (Dry) Wild Rice
3 Cups Water
½ Tsp Salt
Instructions
Since the Wild Rice takes the most time I start by putting my rice and water in a covered pot and cranking the heat until it starts to boil. Once boiling, put the rice on low and let simmer for 1 hour. After 1 hour remove from heat and let stand for 10-15 minutes.
As the rice is cooking I turn the oven to 350 degrees and start chopping my peppers. I slather a little coconut oil on a pan and put the pop the peppers into the oven for about 30 minutes.
Once the peppers are in the oven I chop the onion and warm up a skillet to medium heat. Throw the onions in the skillet and let them start to cook for about 10 minutes, mixing occasionally. Next I put the ground beef, salt, and pepper in with the onions and let that cook through. As the flavors combine and the meat cooks through you are stirring occasionally. This will take about 15-20 minutes.
When all your components are complete, portion them into containers (For my lunches I typically do about 4 ounces of the beef & onion mixture, ½ cup of wild rice, and 1 cup of roasted bell peppers), pack in the fridge or freezer and lunch away.
